Pesto Chicken Stuffed Peppers Recipe

I absolutely love meals that help me to get dinner on the table faster. This Pesto Chicken Stuffed Peppers Recipe does not disappoint! I know it says it takes 50 minutes to make but hear me out.

This recipe is a rockstar because you can use a rotisserie chicken from the grocery store (unless you live in Costa Rica like me…then you will have to cook that chicken yourself!), a jar of pesto (read the ingredients, you can find pesto with few additives), and God already made the container (that’d be the peppers).

By using a pre-cooked chicken and a store bought jar of pesto you will shave about 20-30 minutes off of the time it takes to make this. An added bonus is that this meal will reheat well, making it perfect for meal preppers that like to make meals in bulk.

Most stuffed peppers recipes out there use either Mexican or Italian flavors with a tomato base. I LOVE those recipes. In fact, that is my go to when it comes to stuffed peppers! But every now and then it’s good to mix things up and try something new. I would say pesto is a brand new way to enjoy this dish, wouldn’t you?
